With a slightly bitter taste, adding yellow dock (in small quantities) can add some extra "oomph!" to your spring salad. It is often used by herbalists in teas and infusions to invigorate and promote vitality when you're feeling run down.

Cautions and Contraindications: When using yellow dock, avoid excessive quantities of tannin tea or any herb teas that are high in tannin and alkaloids, such as peppermint Mentha ×piperita (L.) and coffee. Tannins and alkaloids interfere with the uptake and absorption of iron. Anyone with a history of kidney stones should use yellow dock cautiously. Yellow dock should not be taken where there is intestinal obstruction, during pregnancy, or while breast-feeding.

YELLOW DOCK OINTMENT:
Yellow dock Rumex crispus root: 1 ounce
Chamomile German Matricaria recutita flowers: 1 ounce
Chickweed Stellaria media leaves: 1⁄2 ounce
Sweet almond oil: 1 ounce
Beeswax (grated): 1⁄2 ounce
Prepare a standard decoction of yellow dock root. Strain over the chamomile and chickweed, and infuse for 15 minutes. Set aside and prepare the ointment.
To prepare the ointment, melt the beeswax and almond oil over a water bath.
Remove from the heat and cool until lukewarm. Beat in the seven ounces of yellow dock and chickweed liquid until the ointment emulsifies.
Transfer to a nine-ounce jar, label, and store in a cool place. Use within three to six months.
